Scott, who has returned from working in world-renowned restaurants to set up his own food company, combining his passion for good locally sourced food, old tradition and his love of West Wales. Bit by bit, he is transforming the reputation of Wales as a great place to eat.

Setting up cnwd was about returning to Scott's roots. After years of working in some of the top restaurants in London and New York, Scott wanted to come home and create his own dishes in his own way. West Wales was calling.

Setting up a smokery and producing premium smoked wild fish was a natural step. After all, Scott’s own grandfather fished for wild salmon from a coracle on the River Towy.

With its stunning coastline, beautiful rolling hills and abundance of wonderful produce right on its doorstep, West Wales is very special to Scott and a constant source of inspiration for his food and the way he lives.
